Shio-koji or "salt" koji. When koji is allowed to ferment with a mixture of salt and steamed rice, the rice grains break down into enzymes, glutamates, and sugars, imparting a mild salty taste with great umami flavors. 

Use it in dressings, dips, brine, marinades, sauces, and soups.  It will enhance the flavor of your food, tenderize meats, and is good for you. This versatile seasoning does so much more than the salty taste out of the container. The live cultures within the seasoning activate the ingredients you put them on. There is such a variety of tasty applications that Shio-koji will become your favourite pantry ingredient.

Van Koji is on a mission to bring shio koji, and its line of natural probiotic seasonings, to Canadian pantries. Created by mixing rice with a fungus that's also used in Japan to prepare indispensable products such as soy sauce and miso, shio koji is then fermented with sea salt and water. The result is a product that’s great for digestive health, imparting intense umami flavours with only half the amount of sodium. A versatile pantry item, it can also be used to tenderize meats or to enhance the flavour of sauces, brines, marinades, dips, and dressings. Besides shio koji, Van Koji also sells garlic koji, BBQ koji, the soy sauce-based shoyu koji, and its gluten-free version tamari koji.
